XIII Forum of Brewers, Distillers and Beverage Producers: How It Was

The XIII Forum of brewers, distillers, and beverage producers took place on September 26-27 in Lviv. The restaurant-brewery "Stargorod" was glad to host this event. More than 120 participants from around Ukraine have been gathered to share news and discuss industry trends and prospects. An interesting program awaited participants with informative speeches, discussion panels, an exhibition of technologies and equipment for the production of beverages, public tasting of beer, spirits, wine, cider, other drinks, and snacks from Ukrainian producers. This time, a new audience, winemakers, was invited to the forum, and at the end of the day, an exclusive section - "Beer VS Wine" was held. The second day, September 27, included a business tour of the Pravda Beer Theater plant and Vavilon Craft Brewery.
 
The forum started with the welcoming speeches of the organizers of the XIII Forum of brewers, distillers, and beverage producers, Kateryna KONEVA, and Nadia Yashchuk, who are also founders of the media group "Technologies and Innovations"
 
Yuriy BUCHKO, deputy head of the Lviv regional state administration, delivered a speech about trends in brewing, winemaking, distillatory production, and other beverages. 
 
Dmytro NEKRASOV, one of the founders of the association "Independent Breweries of Ukraine", master brewer, and technologist of the First Dnipro Brewery, told us about the association "Independent Breweries of Ukraine" and called to join.
 
 
It should be noted that advanced technologies for the production of beer, distillates, and other drinks were presented by companies from different regions of Ukraine during the forum. About innovations in PET keg production were told by the Global Business Development Manager of the company PET Technology Olena MURAVCHENKO online format. The speaker joined the forum from Canada!
 
Yuriy VOYTYUK, representative of GEA Ukraine, presented current technological solutions for the beer and non-alcoholic industry and distillers. PET kegs MCT.company was introduced by Viktor VOLIVETSKY, the head of the quality department of K&B company
 
 
The co-owner of the Czech Brewmasters company, Jindřich Chejn, told us online about the requirements for the quality of malted barley from the brewery`s point of view. British brewing malt Muntons was presented by Volodymyr GLUSHKO, a representative of Best Way Foods. The company has recently become a distributor of Muntons malts, and from now the breweries will get an extended choice of British malts in the production of diverse and quality beers. Belgian brewing traditions and Dingemans malt to expand the range of beer from a family malthouse with more than 150 years of history were introduced by Valeriy VINOGRADOV, brewer of Malle Brewery, and Yulia KIRYLENKO, chief technologist of BLINKERS BREW brewery (Romania, Timisoara), technologist of Gonzo brewery.
 
 
Gilles HOMER, manager of technical support for beer sales in Europe of Fermentis company, and Bohdan DEMCHENKO, representative of the company Malt of Ukraine, TM Fermentis, told us about SafLager TM Baseline yeast. 
 
Tetyana SAVITSKA, a practicing microbiologist at the Malle Brewery, delivered a speech about the basics of laboratory analysis for beer production.
 
 
Innovative technologies for monitoring beverage quality in production were presented at the forum by Donau Lab Ukraine, our main laboratory partner. Forum participants learned about the EasyDens densitometer, the SmartRef digital refractometer, and other tools and equipment for quality control of beverages in production.
 
 
From the Experience of Brewing and Production of Other Beverages
 
During each forum, brewers, distillers, and beverage producers from different parts of Ukraine introduce their experiences and share their achievements. Thus, the advanced practice of brewers was highlighted during panel discussions. There was a discussion on "Beer Aging in a Barrel". And, the debate was moderated by Dmytro NEKRASOV, one of the founders of the association "Independent Breweries of Ukraine", master brewer, and technologist of the First Dnipro Brewery. The following participants took part in the discussion: Tetyana VASHCHUK, manager of brewing courses, CEO and managing partner of Litopys brewery Nellie KHUDOBINA (DAVNICHENKO), brewer of "Pravda Beer Theater" Dmytro ANTONOV, chief technologist of "BIRKRAFT" (Varvar Brew) Olena DERIY, and Yuriy KEPKANOV, head of the company "SP KONT-2".
 
 
 
The participants of the discussion panel discussed the following issues: technological nuances of the beer aging process, the duration of aging, the effect on the taste properties of beer, the variety compatibility and quality standards, etc.  During the discussion took place a beer tasting from Varvar Brew and Pravda Beer Theater.
 
 
Chief Technologist of "Modern Beer Technologies" company, Drofa Brewery, Tymofiy DROZDOV talked about what beer styles are worthy of brewing for selling.
 
Bohdan Tochka, the head brewer and co-founder of "MOVA Brewing co" told participants about non-alcoholic beer and low-alcohol drinks as new trends in brewing and beverage production. Anna SAMARETS, the marketing director of "MOVA Brewing co" analyzed marketing in the beer business using the example of the MOVA brewery.
 
During the forum, special attention was also paid to the mead beverage production. Such drinks as medaks, apiphytobalsams, medivky, and honey wine, history, nowadays, and prospects of the oldest Ukrainian drink were told by Roman Voytkiv, founder of the company "Ukrainian Medovary".
 
 
During the discussion panel "Forum of Additional Possibilities", participants discussed innovative approaches to beverage production. Yulia KYRYLENKO, chief technologist of the BLINKERS BREW brewery (Romania, Timisoara), technologist of the Gonzo brewery; Mykola IVASHYSHYN, director of the Volyn Brewery, Valeriy VINOGRADOV, brewer of Malle Brewery; Roman MUKOYD, associate professor of the department of biotechnology of fermentation products and winemaking, candidate technical of Sciences of the National University of Food Technologies, discussed the production of low-alcohol drinks, kombucha, vitaminized drinks, etc.
 
 
Special attention was paid to the distillery production as well. In particular, a discussion panel covers the peculiarities of the distillery production business. Roman MEDVEDCHUK, founder of Strong Distillery, moderated the discussion panel. The discussion was attended by Tymofiy DROZDOV, Chief Technologist of "Modern Beer Technologies", Brewery "Drofa"; Kostyantyn KOROLYUK, senior researcher at the Institute of Food Resources of the Ukrainian Academy of Sciences; Ihor Parij, restaurateur.
 
 
Forum of Beer and Wine
 
The "BEER VS WINE" section was introduced exclusively during the forum. The moderator of the section was Volodymyr PECHKO, head of the "UKRSADVYNPROM", Dmytro NEKRASOV, one of the founders of the "Independent Breweries of Ukraine" association, master brewer, technologist of the First Dnipro Brewery.
 
The discussion panel has been introduced by Oleksandr GARNOVDIY, head of the Association of Grape Growers, Winemakers and Distillers of Transcarpathia, a sommelier Hanna KOVALEVSKA; Mykola IVASHYSHYN, director of the brewery "Volynsky Brewery"; Klara GUTNIKOVA, brewer of Odesa Private Brewery; Inessa HETMANSKA, sommelier, brand ambassador of myWine, Big Wines.
 
 
The participants of the section discussed technological distinction in the process of beer and wine production, peculiarities of raw materials, and whether there is a shortage of raw materials for wine or beer, basic taste indicators, and marketing features of wine and beer sales. Forum participants learned about the variety of beer and wine styles and discussed how to develop a culture of consumption for Ukrainians with a focus on wine and beer. The participants of the discussion also dispelled the myth that wine is a woman`s drink and beer is a man`s drink.
 
 
Charity Auction in Support of the Armed Forces
 
At the end of the forum, a charity auction of goods and services introduced by forum partners took place to support the co-founder of the DiD brewery, Serhiy DZYUBAN, who serves in the Armed Forces. We fund about UAH 85,200 to support Serhiy`s unit.

Business Tour to the Pravda Beer Theater and Vavilon Craft Brewery Plant
 
The second day of the forum, September 27, included a business tour of the Pravda Beer Theater plant and Vavilon Craft Brewery.
 
Vavilon Craft Brewery is a pub brewery that was founded in 2018, in Lviv. The brewery got its name thanks to the city of Babylon, which, according to historical records, where it was brewed the first beer. The brewery uses equipment from the Ukrainian-German manufacturer "Schultz-Trade". A water purification system by the world`s leading manufacturer "ECOSOFT" is also installed. The raw materials for the beer production are from the countries that are leaders in malt and hop cultivation, these are Germany and Belgium.
 
 
Pravda Beer Theater is one of the pioneers of craft brewing in Ukraine, which began its path when most people knew only light, dark, and unfiltered beer. But, thanks to such breweries as "Pravda", the culture of consumption of craft beer in Ukraine began to develop quickly. Pravda Beer Theater is located in the heart of the city, and now it is not so easy to get a free table there to taste beer. The participants of the business tour had a unique opportunity to look at how a successful beer is brewed.
